Spiced Vegan Lentil Soup (with video)

INGREDIENTS

¼ cup extra virgin olive oil
1 white onion, chopped
2 carrots, peeled and chopped
4 garlic cloves, pressed or minced
2 teaspoons ground cumin
½ teaspoon dried thyme
1 cup brown or green lentils, picked over and rinsed
4 cups vegetable broth
2 cups water
1 teaspoon salt, more to taste
Freshly ground black pepper
946ml vegetable broth
½ cup tomato sauce
1 Bay leaf
1 tsp turmeric


INSTRUCTIONS

Stove Top Method
Put all the ingredients in a large pot and bring to a boil. Reduce heat to a simmer, cover and cook for 40-60 minutes, or until vegetables are tender. Season with salt and pepper and serve. As simple as that :) you can eat it with bread or even alone .
