INGREDIENTS¼ cup extra virgin olive oil1 white onion, chopped2 carrots, peeled and chopped4 garlic cloves, pressed or minced2 teaspoons ground cumin½ teaspoon dried thyme1 cup brown or green lentils, picked over and rinsed4 cups vegetable broth2 cups water1 teaspoon salt, more to tasteFreshly ground black pepper946ml vegetable broth½ cup tomato sauce1 Bay leaf1 tsp turmeric
INSTRUCTIONSStove Top MethodPut all the ingredients in a large pot and bring to a boil. Reduce heat to a simmer, cover and cook for 40-60 minutes, or until vegetables are tender. Season with salt and pepper and serve. As simple as that :) you can eat it with bread or even alone .
